Madhur Jaffrey’s simple Cucumber Salad

  • 275 g cucumber, about 25cm
  • 1/3 tsp salt
  • pinch  cayenne pepper
  • freshly ground black pepper
  • 1/3 tsp roasted and ground cumin seeds
  • 1 lemon, juice only

Peel the cucumber and cut it into half, crosswise or three pieces if your cucumber is very long, you want lengths around 12-114cm long. Now cut each piece of cucumber into 4 sections lengthwise. Arrange the wedges on a plate. Sprinkle the salt, cayenne, black pepper, ground, roasted cumin seeds and pour lemon juice over them.  Chopped mint would also be a welcome addition to this recipe.
