Super Salad Dressing – bean sprout season!

To your base of mixed leaves:

* add soft green herbs (dill, mint, parsley, tarragon etc),

* add a mix of seeds or nuts, toasted lightly in a hot but dry pan toasted seeds.

* add a handful of beansprouts

Then add the dressing of your choice, but the following is a stunner.

for 4

1 garlic clove, crushed to a paste with salt (use pestle or flat side of large knife blade on a chopping board)
¼ tsp ground cinnamon
2 tbsp pomegranate molasses
1 tbsp water
4 tbsp extra virgin olive oil
½ tsp sugar (optional)
salt and fresh ground black pepper

 Mix garlic, molasses and cinnamon, stir in water, then whisk in oil, taste and season.
