Simple Fast Banana Bread

3 ripe bananas

¼ cup vegetable oil

1 tsp vanilla

1 ½ cups plain flour

½ cup sugar

1tsp salt

1 tsp baking powder

1 cup chopped walnuts or other (optional)

Pre-heat oven to 180C. Mash the bananas and mix with the wet ingredients. In another bowl mix the dry ingredients. Add the dry ingredients to the wet in 3 parts, stirring gradually. Bake in a well-oiled bread tin for 40-45mins until a skewer comes out clean.

Substitute grated, chopped, sliced fruit of your choice (apples, blackberries, pears, rhubarb), just add a little more flour for a thicker batter to soak up the juices these fruit will release.
