Plum mint Salsa

Makes about 2 cups

  • 4 ripe plums pitted and diced
  • 1 jalapeño chilli diced
  • 2tbs fine chopped mint leaves
  • Pinch of salt and sugar
  • ¼ – ½ small red onion or spring onion
  • Juice of lemon or lime

Put halved, pitted and chopped plums in a bowl with the onion, mint and jalapeno. Stir gently to mix. Add a bit of lime or lemon juice, a bit of salt, and a bit of sugar to taste. Add more of any of the last three ingredients to taste. If you wish to make this salsa ahead, wait until just before serving to add the lime, salt, and sugar.
